Jem gained over 15 years brewing experience before founding Cheddar Ales in 2006.

Joe Palazzo, Brewer

Bringing extensive brewing qualifications and experience, he joins us in 2026 with a real passion for producing consistently great beer. Even more exciting is that he’s set to become a dad in May '26!

Simon Baker, Drayman

Simon joined Cheddar Ales in 2014 having worked in the delivery trade in and around Bristol.

Tom Adams, Brewer

With a background in hospitality, a passion for brewing, and even experience starting his own company, we’re delighted to have Tom join the team in 2026.

Catherine Nicholson, Office Manager

Catherine has worked in sales with national and international brewers and wholesalers for over a decade. She joined Cheddar Ales in 2015 and is Jem`s better half.

Joe Chard, Taproom Assistant

Joe has been part of the Taproom team since 2020. An invaluable member of our team, helping at weekends whilst following a career in architecture.

Matt Wilkins, Taproom Manager

Matt joined the team in January 2024 following many years within the industry. Previously a musician for 10 years and a founder member of The Leylines!

Hugh Page, Taproom Assistant

Hugh first started helping out at events in 2025 and has since become a familiar face behind the bar, fitting shifts in around his Master’s studies and hockey commitments.
