Maris Otter Barley

Maris Otter is a variety of barley that has been grown in England for over 40 years. The 'malted' grain is produced by a process in which the barley grains are made to germinate and are then dried quickly before the plant develops. Maris Otter is the malt that we use to form the foundation of our beers as it provides a consistent wort and imparts a full flavour.

Crystal Malt

Crystal Malt is a 'coloured malt' primarily used to make adjustments to the depth of the golden red hue of beers. It also contributes a caramel, and some say biscuit, flavour and adds body.

Wheat Malt

Wheat Malt is often added to our beers to aid head formation and retention, giving a lacing effect all the way down the glass.

Whole Hops

Whole hops are the dried female flowers of the hop plant Humulus Lupulus. Hops provide the bitter flavours that counteract the sweetness of the malt that forms the basis of beer. Hops also help keep the beer naturally fresh and contribute to head retention. We use a wide variety of whole hops at Cheddar Ales, such as English Goldings and Challenger hops, with each contributing different flavours to our beers.
